What Is Bacanora?
Bacanora is the hidden treasure of Mexico’s agave world — crafted exclusively in the mountains of Sonora from Agave Pacifica, a varietal that thrives in the desert’s extremes. For 77 years, Bacanora was outlawed, distilled only in secret and passed down through generations.
Today, it proudly holds a Denomination of Origin, much like tequila and mezcal, and is finally being celebrated beyond its birthplace.
The process is both traditional and rooted in the land: agave hearts are slow-roasted — either in underground mesquite ovens or modern steam ovens — then crushed, naturally fermented, and distilled into a spirit that rests beautifully between tequila and mezcal. It’s sweeter than tequila, less smoky than mezcal, and completely distinct in its Sonoran character.
